Jim Lahey's Pizza Recipe

This was our first attempt to try making pizza from scratch!

Jim Lahey's Recipe for the pizza dough is:
+3.5 cups Bread Flour
+2.5 teaspoons of instant or other active dry yeast
+3/4 teaspoon table salt
+3/4 teaspoon plus a pinch of sugar
+1.5 cups room-temperature (about 72 degrees F) water
+olive oil for the pans
These ingredients are enough for two medium sized pizzas.

The key is to put the dough in a bowl and cover with saran wrap,
then let it rise for about 2 hours,
and then split the dough into half and cover it with a moist paper towel
and let it sit for another 30 minutes.
We were SUPER hungry so we cut down the initial 2 hours to about 1.5,
and for the first pizza we skipped the extra 30 minutes.

Bake it in the oven at 500 degrees for about 20-30 minutes,
depending on the thickness of the crust and what you put on top...

Homemade Ravioli

Step 1: Mix together the flour and semolina.

Step 2: Make a well in the center of the flour mixture.
Crack the eggs into the well.

Step 3: Put a drizzle of olive oil and a pinch of salt in the well.

Step 4: Knead the pasta dough by pushing down and away from you
with the palm of your hand.
Continue this until the dough is smooth.

Step 5: Cover the dough and let it rest for 15 minutes.
With the slot of the pasta machine on its widest setting,
turn the handle while feeding the dough into the slot.
Gently hold the flattened dough as it comes out of the pasta machine.

Step 6: Place any kind of ravioli filling and use an
egg wash to seal the two sheets of pasta together.
Use a pastry brush to work around the filling and
thinly coat the entire surface of the pasta sheet.
Gently lay the top sheet of pasta over the layer covered with filling and cut.
Fresh pasta will cook in minutes, so make sure to not overcook them.

Top with an organic tomato sauce made from scratch like this one,
or simply drizzle with olive oil, salt, and pepper.

Ferry Building, San Francisco

I love going to the Ferry Building when in San Francisco.
They have so many great little shops and eateries;
A few of which are still on my list of places to try.
Definitely a must visit when in the city...
